Wouldn’t it be nice if one could enjoy a decadent, rich and delicious chocolate dessert with zero guilt? Impossible?
I am here to tell you, my friends, such things can and do exist.
Here is a simple, nourishing and tasty recipe that will blow your taste buds away. It is gluten and dairy free, suitable for vegans and a nutritious treat the whole family will love.
1 sweet potato
100g of dark chocolate (the darker the better – personally, I have a weakness for Lindt 90% cocoa)
1/2 a can of coconut milk
1/2 cup of green tea
1/4 cup of dates (soak and drain first to soften, if using dried)
1 tablespoon spoonful of flaxseeds
1 teaspoon of poppy seeds
Bake the sweet potato in the oven until soft.
While this is baking, melt the dark chocolate and brew the green tea. Add these, with the dates, flaxseeds and poppy seeds into a blender. Once the sweet potato is cooked, remove the skin and add this to the blender, also. Pour in the coconut milk. Blitz the mixture until a smooth, thick and creamy blend.
Placing the mixture into a container, cover with cling film and place in the fridge. Leave until the mixture solidifies a little, and becomes a soft, mousse like texture.
