Huevos Rancheros

For lunch today, I made my husband and I a tasty Mexican inspired lunch, “Huevos Racheros”. This is really simple to make, and is absolutely delicious.

Ingredients

1 – 2 eggs (per person)

1 medium red onion, chopped

2 large fresh tomatoes, chopped

1/4 cup of mushrooms, chopped

1 tablespoon of cumin

1 tablespoon of garlic powder or 3-4 cloves of fresh garlic

A pinch of chilli powder

1 can of black eyed beans

1 cup of chopped or pureed tomatoesIMG_0442

Method

1. Gently fry the onion, fresh tomatoes, mushrooms and black eyed beans together, adding the cumin, garlic and chilli powder to season during cooking.

2. Once this cooked, add the chopped or pureed tomatoes.

3. Gently crack the eggs on top of the salsa as it simmers. Now cover with a glass lid and leave the eggs to poach.

Once cooked, serve with quinoa and a fresh salad.
