Today I cooked a new recipe for my lovely hubby to enjoy while he watched the rugby.
Smoked Salmon and Spring Onion Fishcakes with a Basil, Tomato and Mozzarella Salad
Fishcakes (makes 2)
100g of smoked salmon
1 spring onion
1 tsp of parsley
1/2 cup of fresh basil
2 medium tomatoes
1 mozzarella ball
Firstly I got some of the mash potato left from last night.
Next, I mixed this with smoked salmon and a chopped spring onion. I then sprinkled some parsley into the mixture, and mixed all together.
After adding two eggs, and mixing again, I made the mixture into patties and then cooked at 200 °C for 20 mins.
While the fishcakes cooked, I chopped the basil leaves and tomatoes and shredded the mozzarella ball into smaller pieces.
The recipe was simple, quick and turned out a treat. It really made for a lovely, nourishing and tasty meal to enjoy on a Saturday afternoon, as we watched the Rugby World Cup.
