These tasty and nutritious burgers, topped with a delicious pesto, are a real treat for lunch or dinner and very simple to make.
Lentil Burgers (Makes 4)
1 cup of red lentils
2 cloves of garlic
1 handful of pumpkin seeds
125g of mozzarella cheese or tofu
Boil red lentils on hob until soft and mushy. Then add the cheese or tofu and gently melt these together. Next, add the pumpkin seeds and garlic, and the egg. Mix together and form into patties. Bake at 200 degrees for 20 mins or until golden brown.
Basil and Walnut Pesto
1 handful of fresh basil
1 handful of walnuts
1 tablespoon of olive oil
Blitz ingredients together in a food processor until smooth. Serve on top of the burger.
