Three Ingredient Gnocchi


This lovely gnocchi is easy to make and tastes amazing. It’s also gluten free! Here’s the recipe:


1 butternut squash

1 cup of polenta (plus extra for dusting)

1 egg


Roast butternut squash in the oven until soft. Then place in a m2015-11-17 19.32.36ixing bowl and mash the squash, and then add and mix in with the polenta and egg, until it is stiff and then knead the dough (add extra polenta if needed as you knead).  Then get the dough and separate into strips. Then cut these into three or four smaller piece, and gently shape into the characteristic gnocchi shape. For a nice touch,  get a fork and gently press this into the shape to give this a ridged look.

Next boil the gnocchi on the hob, until the water is bubbling and the gnocchi is cooked.

Then add your sauce. Here is the one I used,
and a well loved home made recipe.


1 cup of passata

1 red onion

1/4 cup of basil

1/4 cup of walnuts

1 tablespoon of olive oil or coconut oil


Blitz ingredients into a food processor and then add to the gnocchi and simmer together on the hob for a couple of minutes.
