Christmas is a wonderful time of year for chocolates, which are in abundance. If you fancy the enjoyment without the guilt, give these tasty vegan paleo chocolate truffles a try. Oh, and they’re gingery, too
100g dark chocolate (min 70%, but the darker it is the better)
1 cup of mixed nuts (mine had cashews, hazelnuts, walnuts and almonds, but any will do)
1/4 cup of ginger herbal tea (I used Twinings)
Melt the dark chocolate and then add the ginger tea. Put in a blender with the nuts and slightly blitz the ingredients, leaving a rough mixture. Then spoon portions of the mixture evenly onto the plate. The mixture should make 6 – 8 truffles. Then refrigerate for the minimum of 1 hour, or until solid. Enjoy!
